Gyro Shack was founded in 2009 in Boise, Idaho, by Gus Zaharloudakis. Gus’s passion for beginning a gyro brand was kindled during a visit to a gyro eatery in Crete, Greece. Gus and his family ate there regularly while on vacation. He loved the concept so much that he decided to open his own similar eatery in Boise with one exception; it would have the addition of a drive-thru. Gus took his experience working with local chefs in the Boise area and used this knowledge to evolve the traditional Greek gyro with new and unique flavor combinations. This evolution came to be the menu for Gyro Shack and has only evolved further since Gus founded the Brand.
If you ask Gus, he will tell you he “built the shacks for the love of food and health – the Greek way.” Although Gus turned over the reins in 2015 to new ownership, Gyro Shack today strives to keep the Brand as Gus envisioned. As with any growth, there have been changes, but all of them are necessary to assist in scaling and growing a business from start-up to emerging Brand. We can’t wait for the day in which someone refers to Gyro Shack as a mature Brand.
